Roasted Delicata Squash – Quick & Easy

Delicata squash is a variety of winter squash with a delicate rind, or skin. It’s easy to cut, de-seed, slice and roast. Makes a great snack or side dish.

To make:

  • Cut the ends of the squash
  • Cut longways and remove the seeds
  • Slice into 1/4” pieces
  • Coat with a drizzle of olive oil
  • Sprinkle with salt and pepper
  • Roast at 425 for 20 minutes in a cast iron
  • Turn and roast another 5 minutes
  • Serve and Enjoy!
