Cuban Style Ground Beef aka: “Picadillo”

(This is how to make a healthier version of the typical Cuban Style Ground Beef Dinner)

2 – 3 Tablespoons of Olive Oil
1 small onion
1 small red pepper
2 large cloves garlic
1 pound Ground Turkey or Ground Buffalo Meat
8 ounces tomato sauce
1/4 cup white wine OR beer
1 1/2 teaspoons cumin
2 teaspoons oregano
1 teaspoon fresh ground pepper, or to taste
1 1/2 teaspoon salt, or to taste
1/2 cup green olives, Goya, sliced

1. Cut onion in quarters and put in food processor with the garlic and pepper. Chop well into mixture is processed and you don’t see large chunks of vegetables. (this translate into about 1 1/2 Cups of “Sofrito”.)

2. Heat oil in a large pan and saute onions, garlic and pepper mixture for about 3 – 5 minutes. Add Ground meat (turkey or buffalo), mash into pan and sprinkle with cumin, oregano, salt and pepper. Mix well.

3. Once meat is browned. Add Tomato sauce and wine or beer. Let simmer over low heat for about 10 minutes, add green olives. Let simmer another 5 – 10 minutes.

4. Serving Suggestion: Serve over white or brown rice, or whole wheat flour tortillas.
