The package of Bob’s Red Mill for the Vegi Soup Mix caught my eye the other day and thought I would give it a try. This dish is anywhere between a stew and a soup, depending how think or think you like it. We like “thick” around the Hakes house.. If you want it to be more of a soup, just add more vegetable broth or water.
This was delicious! This is first time I’ve made this so I didn’t really measure, these are estimates.
Lentil, Split Pea & Barley Vegetable Stew
1 tablespoon olive oil, extra virgin
1 small onion chopped
1 – 2 carrots chopped
1 cup Vegi Soup Mix by Bob’s Red Mill
4 cups vegetable broth
1 tsp dried oregano
1 tsp kosher salt
1/2 tsp crushed red pepper
1/2 cup Parmesan cheese, freshly grated (optional)
1. Heat oil over medium high heat and sauté carrots and onions until onions are translucent, about 3 minutes.
2. Add broth, vegi mix and spices, stir and bring to a boil.
3. Lower the temperature to low, simmer over low heat for 30 – 45 minutes. Taste and add salt and pepper if necessary.
4. top with about 1 tsp of grated Parmesan cheese if desired.

note that you may want to tone it down a bit and only use 1/4 tsp of crushed red pepper. We just made it tonight and it was really good, but my mother in law thought it was just a bit too spicy. – Betty
