Delicata squash is a variety of winter squash with a delicate rind, or skin. It’s easy to cut, de-seed, slice and roast. Makes a great snack or side dish.
- Cut the ends of the squash
- Cut longways and remove the seeds
- Slice into 1/4” pieces
- Coat with a drizzle of olive oil
- Sprinkle with salt and pepper
- Roast at 425 for 20 minutes in a cast iron
- Turn and roast another 5 minutes
- Serve and Enjoy!
