When it comes to game day, sometimes the connection happens over the score OR around the appetizer tray or the tailgate grill. Game day or tailgate food needs to be just as reliable as the true fans, and it needs to be easy. We need less kitchen stress and more connection.

The Challenge of Game Day Cooking

I recently put a group of marketing professionals to the test. They were given limited ingredients and the task of leveraging AI to develop the perfect game-day appetizer.

The ultimate fan doesn’t want flimsy food. The challenge was simple: create a handheld dish that was savory and robust. It had to hold up through a tailgate party or a high-energy watch gathering. We wanted a Game Day Hero Appetizer that used simple and easily accessible ingredients.

The Winning Strategy

The team succeeded by focusing on a simple structure and bold flavors. They didn’t just give us a recipe. They gave us a system that can be repeated and customized every season. It proves you can use modern tools, like free generative AI, to support your cooking style instead of overwhelming it. The result is a robust, simple crostini that brings big flavor without the big mess.

Game Day Hero Kick Off Crostini

Ingredients

  • 2 Baguettes Slice 1/4" thick, netting 20-24 pieces
  • 1 cup Ricotta cheese or goat cheese
  • 4 oz Ham Diced
  • small Red Pepper Diced
  • 2 Green Onions sliced
  • LaRosa's Diablo Sauce For drizzling and serving on the side

Instructions

  • Brush each slice with olive oil and toast the baguette slices in 400F oven for 8 – 10 minutes. Remove from oven.
  • Spread a layer of ricotta or goat cheese.
  • Top with ham, diced red pepper, and green onions.
  • Drizzle LaRosa's signature Diablo sauce and serve with a side of sauce for those who want an extra spicy kick.

Notes

Recipe developed during December’s 2025 AMA Executive Marketer Team Building Event by a team of marketing professionals with the assistance of AI and limited ingredients.
During the event we split the baguettes with half ricotta and half goat cheese to accommodate an allergy.
I would also suggest to try this recipe vegetarian by omitting the ham and adding about 1 tbsp of grated lemon zest to the ricotta or goat cheese.
If you don’t have access to LaRosa’s Diablo Sauce, you can test with another sweet and spicy sauce. Although, this sauce was really spicy and gave it a real “game-day” kick!
